About This DIsh

Potstickers, known in Mandarin as Guō Tiē, are a beloved Chinese dumpling that bring together two irresistible textures: a golden crispy bottom and a soft, steamed top. The name “potsticker” comes from the way they’re cooked — first pan-fried, then steamed — creating their signature crisp yet tender bite.

At Wok Manifesto, we honour this tradition with our own version: dumplings filled with a juicy blend of pork and prawn, pan-fried until the base is golden and crispy, then gently steamed to perfection. Finished with our house-made soy sauce and a touch of crispy chilli oil, each bite offers savoury depth and layered flavour. Crispy below, tender above — a true taste of Guō Tiē, served fresh in Newcastle.
