About This DIsh
High in the misty mountains of Guizhou, where salt was once scarce, local people found ingenious ways to season their food. Instead of relying on salt, they fermented tomatoes, ginger, garlic and chillies into a bright, tangy broth known as red sour stock. Naturally aged for months, the broth develops a complex aroma that is both refreshing and deeply satisfying.
At Wok Manifesto, we honour this tradition by crafting our own house-aged sour tomato stock, fermented for more than six months. Tender sliced basa fish is simmered with seasonal vegetables, beansprouts and lettuce in the vibrant broth. The result is light in calories yet abundant in flavour - tangy, aromatic and utterly unique.

We freshly prepare our food in our kitchen every day. As we use a wide range of ingredients and shared cooking equipment, we cannot guarantee that any of our dishes are free from allergens, even if ingredients are removed on request.
Some of our dishes contain peanuts and other allergens. Whilst we take care in preparation, there is always a risk of cross-contact, so we cannot guarantee that any food served is completely free of nuts or other allergens.
Our vegan dishes are made to vegan recipes, but are not suitable for those with milk or egg allergies due to the risk of cross-contact.
