Sichuan Wanza Noodles, also known as Wan Za Mian (豌雜麵), this street food favourite from Sichuan is all about balance and texture. Chewy noodles wrap around creamy simmered yellow peas and savoury minced pork, then meet the crunch of pickled mustard greens and roasted peanuts. Finished with spring onions, garlic, and a lift of fragrant chilli oil and tingling Sichuan peppercorns, every bite is bold, layered and deeply satisfying.
