About This DIsh

A festive classic from the Beijing–Tianjin region, Aged Vinegar Braised Pork Belly has long been a favourite for family gatherings, especially during Chinese New Year. Unlike the traditional red-braised pork belly, this version is infused with rich Shanxi aged vinegar, giving the dish a mellow fragrance and a delicate sweet-sour balance.

At Wok Manifesto, we braise premium pork belly slowly in soy sauce and aged vinegar until the meat is tender and succulent, with fat that melts in the mouth yet never feels greasy. The result is a hearty, tangy-savoury stew that pairs beautifully with fluffy bao buns. Deeply comforting and full of character, it’s a true taste of Northern China, served fresh in Newcastle.
